For this reason and following our ambition of achieving excellence and bringing our products from the origin to the customer’s fork, we set up our Workshop in Madrid.<\/h2>\n<\/div>It is directed by our chef Marta Alcal\u00e1, who graduated from the Basque Culinary Center. It is the best example of our philosophy “From the Farm to the Fork”: we raise the birds with care and respecting its natural pace of growth, and then Marta and her team precook them following a traditional Christmas recipe.
